Okay, we all know my bizarre fixation with Alton Brown. He is the cooking god, in my world, not to mention he's way hot.
Anyway, on one of his shows where he cut parchment paper into a heart, piled veggies, salmon, and orange sections on one side, and poured on some vermouth, then tucked the edges of the folded heart together to seal it into a pouch, and microwaved for 4 minutes. I was curious!
Tonight, I did my own version. Into the parchment heart went a 1/2 head of raw broccoli (florets only), a 1/2 jullienned zucchini, an 8oz. slice of salmon (no skin), salt/pepper/Mrs. Dash, and I sliced the orange rather than sectioning it and topped the salmon with about 1/2 the orange slices. I sealed the whole thing up, never mind the vermouth, and nuked it for 6 minutes. (If you like your salmon pink in the middle, go with 4 or 5 minutes. This was cooked through.)
Oh. My. Goodness. I am in -love-. The salmon is perfect, the veggies are steamed, and no added fat! I served this with roasted potatoes. Now, of course, I'm feeling all gourmet! What's next? Tiramisu for dessert? Nah, just cantaloupe. My cooking bent is done for today. ;)
